Super Potato Cheese Casserole


Makes

2 lb Idaho Russet potatoes; cooked, peeled,
and shredded
1 1/2 c Sour Cream
1 1/2 c Swiss cheese; shredded
1 md Carrot; shredded
1/4 c Minced Onion
2 tb Minced Parsley
1 ts Salt
1/2 ts Dill Weed
Dash Pepper
Paprika to taste



Combine all ingredients except 1/2 cup
Swiss cheese and paprika. Turn into buttered 1 1/2
quart casserole;
sprinkle with remaining cheese and paprika. Bake in a
preheated
350° oven 30-40 minutes.
